Bon Appetit.

Food again! I just can’t help it. :P I am especially proud of this dish because I thought of it all on my own. My grandmother is always sending Chris and I food and one of her recent meals was meat loaf–a huge pan of it too. Chris and I eventually got tired of it so I figured instead of throwing it away (I hate to waste) I’d cook up something new! I love experimenting & inventing with food. :D

It’s basically two thin slices of meat loaf topped with potatoes, eggs w/ spinach, grilled ham, and spices. Topped with a little shredded cheese. The slices of meat loaf are buttered on each side and grilled on a skillet. The butter gives it a nice yummy crunchy crust. It’s absolutely delicious! Chris loved it as do I. We had it two times last week. :P

I have realized I have tons of recipes so I’m thinking about getting me a nice recipe box or something. I have yet to name this recipe, any ideas!?

Hm…I always name things “Yummy Goodness”. And that looks pretty damn yummy! :) Aw, I love that you make up new recipes…Brett is taking cooking lessons once a month and he’s made some delicious dishes, mm. I may have to take some of his recipes and throw them your way!

For those of you reading this, Trina always creates different, unique recipes. The names, however, aren’t so unique, like:

    Pickle Stuff
    Trina Burritos
    Sausage Stuff

Given that, this recipe will probably be dubbed “Trina Meatloaf” or “Meatloaf Stuff” :) Either way, this was effing amazing. Next time, we’re thinking about making some kind of gravy or sauce to go over the top.

@ Emsz. Thank you! Oh and it was. :D

@ Morgan. Oh wow. A man taking cooking lessons, I LOVE THAT. You have yourself a good one. :) I’m thinking about putting up some of my recipes on my blog, maybe then you and I could swap!

@ Chris. Hey now! When you come up with something unique, I will stop naming my food! Until then.. I’m sticking with them! :P What do you expect. A girl can burn up all her creativity in the kitchen! rawr

Oh, and yes! Very excited about making a gravy sauce for it. OH! And grilled bell peppers sounds amazing in it, whatcha think? Cook them with the ham and eggs? yessss.

OMG, that’s too delicious! I wouldn’t be botherd by their names, e.g. stuff this stuff that – as long as I can sink my teeth into them, I’m contempt :D really lovely photo of the food. And I like it that your house interior is milky white… looks very clean, huge and elegant.

@ Candace. Haha, I may just have to adopt that name!

@ Regina. Glad you like. :D I may have to put up the recipe sometime.

@ Teddy. Thank you! For someone who loves colors, I am starting to get use to the milky white walls. It’s an apartment so we’re not allowed to paint. I always dreamed my house would have earthy colored walls. Although, I am getting used to the whole white walls.. with colorful art work and accents, it wouldn’t be so bad. :D

Trina, So cool to know you make up I recipes, I do it all of the time. Most of the time I can’t do it exactly the same is my problem. I guess I should take the time to write them down. This looks excellent, could be a great breakfast recipe if ham was the main meat rather than meatloaf. I would enter that one in a recipe contest for sure. There is a great sight http://www.allrecipes.com that I belong too, check it out.
